His constant commitment to healthy cooking led him to work with nutritionists from local hospitals to create a low fat, heart-healthy menu that lists all the nutritional information – calories, carbohydrates, cholesterol, sodium, protein, fat, % calories/fat. |
“While we tend to read food labels in supermarkets, when we enter a restaurant, we really don’t know what we’re getting. With so many health-conscious people on special diets – low fat, low salt, that kind of thing – it seemed logical to at least let people know what’s in the food they order,” says Palombo.
Palombo has been involved with training chefs in how to avoid using butter and saturated fats, and go with extra virgin olive oil, and cooking methods that eliminate the need for high-fat / high calorie alternatives. |

His goal is to leave diners absolutely satisfied without walking out of his restaurant feeling as if they over indulged and cannot eat for days.
